Taggiasche olives are small black olives with a thin skin and a slightly salty and bitter taste and have the typical sweetness of Ligurian extra virgin olive oil. They take their name from the town of Taggia, in the province of Imperia, where olive processing was started by Benedictine monks in the 1600s. Taggiasca olives are the fruit of the Taggiasca cultivar variety, which are trees belonging to the Oleaceae family. Taggiasche olives have over time assumed such importance that they have become a typical product of the Italian agri-food sector and not only in the Liguria region but throughout the Italian peninsula.
