Fabio Zardetto’s endless pursuit of the best achievable quality in Prosecco wines couldn’t pass through organic winemaking. The grapes come from a vineyard where organic philosophy has been conducted for more than 25 years and where climate and altitude play an essential role. In Venetian language countrymen called silkworms “Cavalier” (literally “knight”) thanks to their unique way to move forward, that look like knights riding their horses. These animals tirelessly build their cocoons on mulberry trees, in Venetian “Morèr”, trees that, following the tradition, lead the rows of the vineyard.
